It's upstairs now simmering, what can I do to make it edible??
This is the recipe I used:

"5 minute tomato sauce"
1/4 olive oil
1.5 tsp red pepper flakes
1/2 tsp salt
3 med cloves garlic
28 oz homegrown canned tomatoes

Add one medium sized diced onion
1 teaspoon sugar
1 teaspoon ground pepper
1 teaspoon oregano
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 tablespoon chopped parsley
1 small green pepper diced

The additions of the above should give you a fabulous sauce.

If it tastes too acidy- add a pinch or two of sugar- this kills some of the acidity of the tomatoes which happens when using canned tomatoes or ready made sauces. I do this each time I make spaghetti sauce and it tastes much better.

Leave it alone and let it simmer. It has to cook for awhile so that ingredients blend together. Add a 1/2 teaspoon of Oregano. Works for me. Will probably need more salt and pepper later. Let it cook.

Your tomatoes were bitter. You probably didn't taste them, first.
The garlic added more bitter.
Try 1 and 1/2 to 3 tablespoons of brown sugar or honey and 2 tsp. sweet basil.
If you have some sweet wine or grape juice, you could add 1/4 cup.

Nothing about that seems "disgusting" at all. Are you used to commercial, very sweet tomato sauces? If so, add a teaspoon or two of sugar.

garlic and onion powder
oregano
basil leaf

mostly the garlic and onion powder
add til it tastes better

personally I dont like adding the tomatoes it just doesn't give the right taste to me. if it seems too thin of a taste add tomato paste. good luck

Try adding some ramono cheese (a generous amount),basil, oreagano, brown sugar (a big handful)

well taste it and see what it misses. it might need a lil more salt or pepper. or water etc etc.....good luck!
