When oil and water are mixed together thoroughly, the oil globules are so small that they form an emulsion with the water. The oil droplets are "kicked" around in the water by Brownian motion - the particles are so small that movement of the water molecules keeps them constantly agitated.

Because they add an ingredient that makes them combine - that secret dressing is made with Egg Yolks. It forms an emulsion.
Other examples of emulsions are Mayonnaise and Hollandaise!

oil and water will form emulsion. but the addition of stabilizer (i.e. egg) will stabilize the emulsion so that the oil and water emulsion will not separate so quickly or easily.
