a 6lb chicken! Wow, that's definitely a roaster.

Personally, I would brine and roast using a recipe similar to this from Alton Brown.

Roast it slowly for the best chicken ever. Rub in butter and little season-all. Pu on a high heat 240 degrees celcius for about 30 mins then Cook slowly for about 4 hrs 30 mins at 120 degress celcius and the chicken will just fall off the bones.

I love chicken roasted in the oven! Make some herb butter with some softened butter and herbs that you like - (I also love minced garlic in this) and then spread it in between the skin and the breast. Stuff the cavity with sprigs of fresh thyme and some lemon wedges (onion wedges are nice too) and then roast. I do mine at 350 for about 22 minutes a pound. The herbs and aromatics make it so flavorful - it's really good this way!
