This is a good meatloaf recipe -- my family doesn't care for meatloaf either, but we like this recipe.
2 lbs. lean ground beef
3 T. chopped onion
1 c. evaporated milk
1 c. oats
1/2 t. salt
1/4 t. pepper
Combine ingredients well. Place in loaf pan, or shape into loaf on baking sheet -- I use a 2 qt. casserole dish, making slight indention in middle, raising the sides to keep the topping ontop of the meatloaf, instead of running down the sides.
Topping
2 T. Worcestershire sauce
3 T. vinegar
1/2 c. water
1 c. ketchup
2 T. sugar
Mix all ingredients well, pour ontop of meatloaf.
Bake at 350 degrees for 1 hour.

This is my favorite loaf recipe:
Ham Loaf
1 lb ground ham
1 lb ground beef
1lb ground pork (not sausage)
3 eggs
1 tsp salt
1 1/2 c cracker crumbs
small amount milk
1 small can crushed pineapple drained
1c brown sugar
Mix together ground ham, beef, pork, eggs, salt, and cracker crumbs. Mix in enough milk to make it the same consistency any meat loaf. Shape into loaf form in 9x13 baking pan. Sprinkle brown sugar on top, then put pineapple over brown sugar. Bake 375 degrees for 1 1/4 hours.

1 large onion diced
1 green pepper diced
3 eggs
3 cups bread crumbs
1 loaf Velveeta cheese
mix every thing but cheese together well take half and form into a loaf in glass baking pan, slice cheese and lay on top, take remaining meat mixture make another loaf and lay on top pinching the sides together to hold in cheese
mix 2 cups catsup's, and 1/2 cup sweet BBQ sauce, spread over loaf. Bake at 350 for an hour

I make meatloaf regularly so I will give you my recipe. Please keep in mind that these are guestamates or rough guesses as far as amounts. I don't measure when I make dinner.
1 pound ground beef
6 Saltine crackers (soda crackers)
1/2 can of tomatoes or 5 of those tomatoes with a little juice, about 2 tablespoons
2 teaspoons rosemary
1 egg
couple dashes of ground black pepper
1/4 of a green bell minced or 1/2 carton of cut mushrooms (optional)
1/4 diced slightly cooked onion
Preheat oven to 350° F. Place all items in a large bowl and mix with your hands until well blended. Form into a loaf and place in loaf pan. Bake in oven for 1 hour.
To accompany the meatloaf I make a simple beef gravy or serve with ketchup.

I make meat loaf different everytime:
this is a good one:
Hamburger meat
egg
bread crumbs
pepper
garlic powder
small jar of pizza sauce
mozzarella cheese
mix all ingredients together...shape into loaf..bake about one hour until down..melt the mozzarella cheese on the top
this can also be cooked in a crock pot.....

2 slices rye bread
2 slices white bread
1 cup water
1 lb ground beef
1 onion, chopped
1 egg, beaten
2 tablespoons grated parmesan cheese
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
1 teaspoon salt (optional)
1/4 teaspoon pepper
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano or 1 tablespoon fresh oregano
Grase 9 x 5-inch loaf pan.
Preheat oven to 375-degrees F.
Place bread in large bowl.
Add water and let soak for 5 minutes.
Drain off extra water.
Mash bread with fork.
Add next 7 ingredients (ground beef- pepper) to bread, mixing well.
Transfer meat mixture to prepared pan.
Bake for 30 minutes.
Pour tomato sauce over meat loaf and sprinkle with oregano.
Return to oven and bake 20- 30 minutes longer.
Let stand 5 minutes before slicing

If they are meat lovers, you may want to fix them some Boca sausages. They have Italian sausage and bratwurst flavors, and can be found in the frozen food section. I make them smothered in sauteed onions, peppers and mushrooms - served in generous deli bun - and covered in soy cheese (mozzarella, provolone), and mustard. Follow the directions on the package. Warm them in a pan of water. Dump the water out, add some olive oil, and brown the sausage well on all sides - the crispier the better! This is easy, and they taste great. And I serve them with oven roasted garlic plank fries.

slow cooked meatloaf and potatoes
2 med potatoes cut and peeled ,2 lbs ground beef ,1 lrg onion,finely chopped,1 and a half c of crushed ritz crackers,
2 eggs, 2 tsp salt ,1/3 c brown sugar,1/2 tsp mustard
Place potatoes in slow cooker. In large bowl combine beef ,onion,ketchup , crackers,eggs and salt,mix well .
Place over potatoes and pat down to form loaf. in same bowl combine brown sugar,mustard and remaining ketchup,mix well . spread over top of loaf. cook on low setting 6-10 hrs . drain off excess liquid and serve .
