Gelatin is made from boilign the bones of beef (cows) and extracting the gelatin. This is why stocks made by boiling bones thicken upon refrigeration.
The relgigions that cannot eat it are usually those that keep kosher, b/c gelatin is derived from meat, and in a kosher diet you can't mix meat and dairy at the same meal. They could have it if other beef is served, but no dairy (cheese, cream, butter, etc.)
Hindus probably avoid it too.

Gelatin is made from a protein in collagen (the tissue inside of bones) extracted from animal bones, usually horse or pig, sometimes cow.
Some items made of gelatin are gummy candies (not all- check the label), some types of jelly beans like Jelly Bellies, i know Twizzlers have gelatin too. Some baking items using gelatin include some types of mousses, fondant (a sugary dough usually used to coat cakes instead of icing), and sometimes it is even used to coat medicine pill capsules.
Certain religious groups practice vegetarianism which means they don't believe in consuming any animals or animal products. Gelatin is condsidered an animal product, therefore, they will avoid anything that contains gelatin.
Some gelatin substitutes include pectin-- from fruits, and agar derived from seaweed. If you're using gelatin as a thickener, some types of starches can be used as a substitute. If you're using it as a gelling agent, your best bet would be pectin

There is kosher gelatin and it can be eaten with meat or dairy. The 3 religions mentioned would not eat anything coming from a pig.

Many people can't eat gelatine for religious reasons (Jewish, Muslim) and vegans.

hi, im omi, gelatin is made of pigs feet, promise its the truth when they kill the pig for its meat they grate the feet of the pig and add it with some chemicals and extras , muslims can't eat gelatine and jews can't also hindus shouldn't because it is against there religion but there book has changed over time so they belive different thing to the original book.

Gelatin is made from collagen found in bones, like pigs and cows. People have collagen in their bones, too, but I wouldn't recommend using that to make jello.
