Will my jam still taste like a pineapple jam even without pectin?

Improper canning techniques is what effects shelf-life.

Pectin is the gelling agent in jellies, jams and preserves. It's not a preservative. The jam may be more syrupy if you leave out the pectin.

Well pectin is a thickening agent and stabilizer so I don't think it will affect the shelf life but the jam consistency might not be what it should be.

Why you will abandon on pectin? It is made from the peeling of apples and is very healthy for your heart.
