I need to find some ideas for quick and easy meals. My daughter is 15 and likes pasta or chicken. She does not like beef or pork.

I struggle to make something different each day besides spaghetti, macaroni or bean burritos.

Any good, quick simple ideas?

foodnetwork.com has great recipes and some of them are pretty quick, especially Rachel Ray's 30 minute meals. Soemthing I do when short on time is take a chicken breast and douse it with Italian dressing, add sliced onions on top, fold in tinfoil and cook at 375 for about 20 minutes and then steam veggies in the microwave. Really, you can add anything as a sauce and bake chicken in foil, like salsa, marinara, BBQ, or olive oil. Experiment and see what you and she like.
Another thing I have done is brown diced chicken in olive oil and garlic, add chopped onions and carrots, and when the veggies are tender and the chicken browned, I add it to a pot of cream of celery soup or cream of broccoli soup, add corn, and call it chowder. will she eat seafood? try shrimp alfredo, so easy cook pasta, open a jar of alfredo sauce add veggies and shrimp or cooked chicken.
I usually make my own alfredo sauce easy to do, but jarred is quicker.

salmon with terriyaki sauce

lemon chicken

ckicken or shrimp scampi

flounder thats been breaded with crushed cornflakes and parm cheese spray with cooking spray to give that crunchiness and bake

try this out. Tator Tot casserole 8 servings. Preheat oven to 400F coat 3-qt baking dish with cooking spray,in lg bowl whisk milk and eggs . stir in 1 cup cheese and ham. set aside 2 cups tator tots. stir remaining tots into egg mixture with veges pour into baking dish. Top with reserved tots sprinkle with remaining cheese. bake 45 minutes or until golden. u need 11/2 cups of milk +3eggs=11/2 cups shredded cheddar cheese+6oz deli-sliced cooked ham,cut into 1/2" pcs,1pkg (32oz) frozen tator tots 1 pkg (16oz) frozen vegetables, thawed.

chicken fettucini alfredo, chicken spinach alfredo pizza, chicken fingers, grilled chicken salad, chicken nuggets, chicken pocket pies, chicken salad sandwiches, chicken veggie stir fry....there are lots of recipes out there for chicken and pasta dishes......experiment and have some fun with them....cooking is supposed to be fun....and maybe you could do it together...

grilled cheese with pepperoni
strombolis pizza dough with meats and cheeses rolled up
rice and beens

not the greatest meals but my kids love them.
