The cookies will not taste as good. If you do not like vanilla extract or out of it, you may use another flavored extract in it's place to give it a different flavor. Hope this helps :)

I believe it will be noticeable, as I have forgotten to put it in recipes before and you do get a flat taste. If you are saying you don't have any, check with a neighbor that you believe wouldn't mind letting you borrow what you need. People used to do that many years ago. I'm sure someone will have some vanilla extract you can borrow.

Vanilla extract adds flavor to the cookies. You can leave it out, but the cookies won't taste the same.

No, you do not have to use the vanilla, but it will change the taste of your cookies, not the texture....if you are asking because you do not have any, then you could substitute another flavor if you would like to, like almond extract, maybe lemon or rum......

If you use Vanilla Essence or Vanilla Sugar, that's OK. But if you plan on leaving it out altogether then your cookies are not going to be very tasty.

If you don't like vanilla then don't use it. Personally, I think the cookies will taste better if you do use it. You could use almond extract if you prefer the taste of almonds.

Vanilla extract gives it flavor, you can use other extracts to give it alternative flavors too. .... like almond extract... you can even add a dash of cinnamin or pumpkin pie spice.

If you have maple syrup or some whiskey, you can use either as a substitute, teaspoon for teaspoon.
As for the thumbs down, all I did was google "substitute for vanilla extract".
