Lentil soup (several meals).
1 pkg lentils
6 cups water or vegetable broth
1 or 2 carrots chopped up
1 or 2 onions chopped up
1 or 2 celery stalks chopped up
Salt & pepper to taste
Put everything in a large pot an bring it all to a boil. Lower the heat and let it cook for at least 30 minutes. Test to see if the carrots and the lentils have softened up. If not, then let it cook a little longer and keep testing for "doneness". If you want an Indian flavor, add about 1/2 teaspoon of ground cumin while the stuff is cooking. This makes six nice servings. It can keep in the refrigerator (covered) for a few days or it can be frozen. Frozen keeps quite a long time. Let the soup cool before putting it into the fridge or freezer, and for the freezer divide it up in plastic containers with lids. I've been making this soup for years and I can tell you that it's a crowd pleaser.

Well, my first suggestion would be reheating last night's leftovers! With that out of the way and assuming your looking for something a little more creative than a can of soup and tuna fish sandwich, I find Fried Rice pretty darn quick in a pinch. The only drawback is you must use cold, cooked rice otherwise it tends to stick to the pan. I resolve this by making a small batch of rice each week and let it sit in the refrigerator so its ready to use when I am craving something that is both quick to make and delicious.
It's easy to prepare. First you put a little oil in a non-stick skillet (a wok would be better but a non-stick skillet will suffice). Toss in about 1/2 cup of defrosted frozen mixed veggies (these defrost quickly when set in a small bowl of cold water) or fresh veggies if you prefer. I like my fried rice to be colorful but you can really use any veggies you like. Saute your veggies for 2-3 minutes, stirring often. Toss in one or two cups of the cooked rice. Add salt and pepper to suit your taste. Stir for another 2 minutes or until the rice is warmed. Your ready to eat!
For my favorite fried rice dish I saute sliced cabbage and shitake mushrooms. Add the rice, salt and pepper. Then just before digging in I sprinkle some soy sauce, crumbled cooked bacon and sliced onion that has been fried crisp on top. Bon Appetit!

You don't say if you are a vegan or a vegetarian..if a vegetarian then you should find that the "quorn" products are useful..a number of ready meals are available in the range or you can use the quorn fillets as chicken breasts with salad or a curry sauce and rice..you can even dip them in flour and then batter and deep fry them until the batter is a lovely golden brown..and I defy non-veggies to know that the is no meat in them! Or cut the fillets into strips while frozen..you should cook from frozen as well..before battering and then serve the strips with rice and a good Sweet and sour sauce.

when I'm camping I buy a can of soup the flavour of your choice I boil up a pan of vegetables drain and heat the soup through it. so now you have a quick nutritous meal. No need to add salt as the can of soup will have plenty but some freshly ground black pepper on it is good

Miso soup and rice. (half chinese and japanese)
Miso (found in Japanese food section in any supermarket) is a natural form of bean paste. Stir with hot water. If you'd like, add an egg (broken and stirred till fluffy) and mint leaves in the soup. Garnish with any herbs, parsley, oregano for extra herb flavour. Serve with rice.
p.s. you can use marmite too if you can't find miso
Pasta.
Cook spaghetti. Add lots of olive oil. Add chilli peppers, parsley, and all sorts of herbs you can find, I use McCormicks' Pizza Seasoning... and that's it.
Addition- if you find it bland, add some stir-fried button mushrooms, spinach or italian pesto.
Mash potatoes
Boil potato first-hand. These calls for those huge Russet potatoes or any big ones. When cooked (you can poke a fork with it, usually 20 minutes or less), mash them. add butter.
if you are feeling adventurous, this is my fav. add a half- boiled egg and soy sauce. Mash it together with the potatoes.
Jacket potatoes.
Boil potato till cooked. Make a slit and stuff with anything you like, combination as follows; red bean/ broccoli and cheese/ macaroni and cheese and so on you can think of. Put in oven and bake for 5 minutes till the toppings are cooked. If you put cheese, it should brown.
