what do i cook with them or put them in with??? help never had them before...........................

Lentils are versatile & cook quickly.

Here's a basic recipe to get you started:

Lentil Salad Recipe courtesy Alton Brown, 2006

1/2 cup red wine vinegar
1/4 cup olive oil
2 teaspoons Dijon mustard
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup finely chopped fresh parsley leaves
1 teaspoon finely chopped fresh thyme leaves
1 recipe basic cooked lentils, see recipe below
6 to 8 slices thick-sliced bacon, cooked and chopped

Whisk the vinegar, olive oil, mustard, salt, pepper, parsley and thyme together in a large mixing bowl. Add the warm lentils and bacon and stir to combine. Serve warm or at room temperature.

Basic Cooked Lentils:
1 pound brown or green lentils, approximately 2 1/2 cups
1 small onion, halved
1 large clove garlic, halved
1 bay leaf
1 teaspoon kosher salt
1/4 pound salt pork, optional
1/4 teaspoon freshly ground black pepper

Pick over the lentils, rinse and drain. Place the lentils along with the onion, garlic, bay leaf, salt and pork into a large 6-quart saucepan and cover with water by 2 to 3 inches. Place over high heat and bring just to a rolling boil. Reduce the heat to low, cover and simmer until the lentils are tender, approximately 25 to 30 minutes. Drain any remaining liquid and discard the onion, garlic, bay leaf and salt pork. Stir in black pepper and taste for salt. Serve immediately.

BAKED LENTILS WITH CHEESE

Yield: 6 servings

1 package (12 ounces) lentils, rinsed
2 cups water
1 bay leaf
2 tsps salt
1/4 tsp each pepper, marjoram, sage, and thyme leaves
2 large onions, chopped
3 cloves garlic minced
1 16 oz can tomatoes
2 large carrots, cut in 1/8 inch slices
1 stalk celery, thinly sliced
1 green pepper, seeded and chopped
2 tablespoons chopped fresh parsley
1 1/2 cups (6 oz.) sharp cheddar cheese, shredded

Rinse and pick over lentils, discarding any that float to the top or are discolored.
Place lentils in a shallow 3 quart casserole or 9 by 13 inch baking dish along with the water, bay leaf, salt, pepper, marjoram, sage, thyme, onions, garlic, and tomatoes with liquid from can.

Bake, covered, in a 375 degree oven for 30 minutes.

Remove from oven and stir in carrots and celery.

Cover and bake for about 40 minutes more, or until vegetables are tender.

Remove from oven and stir in green pepper and parsley. Sprinkle cheese on top.

Return to oven and bake, uncovered, for 5 more minutes or until cheese is melted.

1 cup dry lentils, cleaned
4 cups Veggie Broth
1/4 cup tomato sauce
1 onion, diced
1 tbsp olive oil
1 tsp Italian seasoning
salt and pepper, to taste

Directions
Combine the oil and onions into a large saucepan over a medium heat. Saute for 5 minutes, or until onions become tender. Mix in the broth and allow the mixture to come to a boil.
Add the lentils, tomato sauce and seasoning. Reduce the heat to low, and simmer, covered, for 45 minutes, or until lentils become tender. Salt and pepper, to taste, then serve.

Lentil soup. Saute some onions, carrots, celery in olive oil. Add 1 cup lentils and 3 cups water or broth.
Can alos add cubed potato or diced tomatoes. Bring to boil and simmer about 45 minutes.

Indians r master with coking lentils in diffrent forms. U plz see any indian cooking site by google search. U ll get many.

Try www.allrecipes.com and search for "lentils." If you want vegan/vegetarian options, replace the meat in the recipes with flavoured tofu or firm tofu that you have marinated in sauce (BBQ, Hosien, terriacki, etc...whatever flavour you like and would work with the recipe) overnight. I like to eat lentils in chili or over rice. You can cook them easily in a slow cooker. Just cover them with a couple of inches of water and add a crumbled bullion cube for flavour.

you can make dirty rice also.. or serve this over mashed potatoes..
boil up 1 cup of lentils in salted water till soft, then drain
set aside
saute up 1 small chopped onion, garlic piece, and 1/2 green bell pepper.. in a bit of olive oil (or any cooking oil) till onion is clear.. add a tsp or two of curry powder or arabic mixed spices (like cumin, couriander, cinnamon, cardomom, black pepper, paprika, red pepper, tumeric, etc) and add salt and pepper... stir well into onion mixture, then toss in drained lentils till coated and heated through.. serve over boiled white rice or mashed potatoes... (add a green salad and your good to go)
