But the stew type dishes (Kare Kare and adobos) are made with fatty cuts of meat, plus the addition of fats you end up with a dish with fat floating in it.

Not too many Filipino familes that I know skin the chicken and trim all the fat off the meat before they start making their adobos. Besides fat adds flavor.

Fats and oils are infused with intense flavors during cooking. Especially with Filipino food.

I agree with the previous posts that not all Filipino foods are oily but compared to some cuisines from other countries, Filipino meat dishes do contain more fats/oils. This is because Filipinos require dishes to have more intense flavors. Foreigners also sometimes comment that Filipino dishes are too salty.

But you must take this into context. Filipinos like intense flavors in dishes because all these dishes are eaten with rice. And while cooked rice can have a wonderful aroma, it is generally bland.

Filipino foods are not oily, generally. can you be more specific which dish are you referring to?

not all filipino foods in general are all greasy..it just depends on the type of dish they're cooking...i see some people who answers this question doesn't really know what they're talking about (because we eat lotsa fish?!..huh?), it also depends on the person cooking the food, i cook filipino dishes and they're not at all greasy!..

well i can say !! the filipino foods its with out culture ,when people cooks spaghetti over cook and sweet its baliktad deba wala cultura ,tapos ang balut??? sos maria , sa bagoon puah maria santissima!!ang sarap contelan pulutan deba.by the way eat italian food coz its the best in the world!!!maraming pinoy sa italy tambok para sobra kaon!!

I can give you some examples of pinoy foods that are not oily,
Pinakbet,sinampalokan,Ihaw na bangus,inabraw, at marami pang iba.
