Vegan Brownies

INGREDIENTS

* 2 cups unbleached all-purpose flour
* 2 cups white sugar
* 3/4 cup unsweetened cocoa powder
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1 cup water
* 1 cup vegetable oil
* 1 teaspoon vanilla extract

DIRECTIONS

1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9x13 inch baking pan.
3. Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

Rhubarb compote. Take 2lbs rhubarb and 1lb dates. (If rhubarb is nowhere to be found, use apples instead but try for rhubarb, your granny will like it) Cut rhubarb into inch long pieces. Drop them into a big pan with one lemon's juice in it. Simmer the fruit til it goes soft ( won't take any time). Add the dates and more juice if needed. Cook a few more minutes til the fruit is soft. Take off the heat and add a half cup of soy cream ( either non dairy cream, soy creamer, or soy ice cream would do). Stir through slowly to make a pattern. Serve as is. If you're taking it to granny, take the fruit compote and reheat at grandmas then add the cream from there.

So yum and perfect for the autumn:

No-Bake Sweet Potato* Tofu Pudding
(*I used butternut squash puree and thought it was even better. Even my non-tofu-friendly companion thought this was awesome: It's better than it sounds!)

Mix in a blender, with a mixer stick, or food processor:
A package (approx. 2 cups) of silken tofu
1 teaspoon vanilla
1/2 teaspoon of cinnamon
About 1 cup (or a bit less) of cooked, pureed sweet potatoes or butternut squash
1/2 cup maple syrup (or honey, if you prefer)
Chill and serve (if the squash or sweets were pre-cooked and pureed and are cold, you can serve right away).
If desired, sprinkle with ground almonds.

Absurdly Easy Chocolate Cake (From http://www.veggieboards.com )

Ingredients:

3 cups flour (680 grams)
2 cups sugar (450 grams)
6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc's = 10 ml)
1 teaspoon salt (5 cc's = 5 ml)
3/4 cup vegetable oil (200 cc's)
2 tablespoon vinegar (30 cc's)
2 teaspoon vanilla (10 cc's)
2 cup cold water (480 cc's)


Instructions:

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. When cool, frost it.

I make this for dinners and get complimented. I up the cocoa to about 10 rounded tablespoons. I also substitute sugar free apple sauce (the type that has no corn syrup or high fructose corn syrup) for the oil to make it fat free and whole wheat flour to make it a bit healthier.

just a side note.... white sugar isnt vegan... animal char (bone) is used in the bleaching process. brown sugar is vegan however. i like mango sorbet (home made)... just puree a mango (or your favorite fruit) and freeze. i like combining fruits.. like pineapple, mango, and kiwi (awesome!!)
