There is no official "Mother cuisine" (it's just whatever your own mother cooked).

There are 5 Mother Sauces:

With a foundation of one of these sauces, you should be able to create any sauce you may need.

1. SAUCE ESPAGNOLE~ A basic brown stock with tomato product, thickening agent(roux) mire poix flavorings and bouquet garni(see glossary) for the foundation seasonongs.

2. TOMATO SAUCE~ Prepared on a tomato product base with flavorings and seasonings, plus liquid added.

3. BECHAMEL SAUCE~ Bechamel sauce is prepared on a white roux and milk base with flavorings and seasonings(onion cloute)-see glossary.

4. VELOUTE~ Basic translucent velvety sauce(literaly meaning velvet) based on roux and liquid. This includes;Veal veloute, chicken veloute, fish veloute and vegetable veloute.

5. HOLLANDAISE~ Hollandaise is prepared by using egg yolks, clarified butter and seasonings.

There are 4-5 mother cuisines, Italian is one of those, I think Chinese and Polynesian are 2 more can't remember the other. Any other cuisine is a an off shoot of the mother cuisine, for example French is NOT a mother cuisine because is an off shoot of the Italian , when one of the Medici woman married into the royal French family and then become queen, bringing with all her cooks.

In European cuisine, the French are known as the best cooks. They learned from the Italians. An Italian married into the French royalty and became queen. She brought with her all of her chefs. The French cuisine came from learning from those chefs. It's an acknowledgment of how the greatest cuisine of Europe started.

Mother cuisine of Europe... Many people would think French cuisine is the innovator. However, My Italian coworkers claim that French high cooking (the fancy food of the Monarchy and what we associate with fancy French food now) was taught to them by Italian cooks that were employed by the French monarchy.

As to the other European cuisines, the only other Superpower of their time was England and we know all they do is boil their food. lol

Hi the term or name mother cuisine implies that the type or dish originated from a particular area or country and can be used by many dishes or foods from around the world hope this helps.

as italians we consider our cuisine the better way to enjoy the food
more healthy,rich flavours,no spicy,good for everyone
In our tradition we love our cuisine like we love our mother and that could be a reason to say that!!!!

I have never heard of this but it makes sense !

If you think about it ,only good food comes out of mom's kitchen, after all we all have the tendency to say this is just like my mom's.

It's a homey feeling ,comfort, filling, made with love by the person who made it! a name that would make anyone wanting to go to a mother's kitchen .

I've never heard it called that before. If it referes to a mother's love to cook for her children then it's one of the many that can have that tag.
