Salmon Mouse, served with crackers

Take a can of salmon, strain it and remove the bones. Take 2- 8oz packs of cream cheese, and put in a mixer with the cleaned salmon. Add juice from one lemon, salt & pepper to taste as well as some dill.

Mix this for as long as you like. The longer you mix the smoother it gets. You can stop and scrape down the sides, and taste to make sure it tastes well seasoned.

Take a large bowl, and line with plastic wrap. Scoop the mouse into the bowl, cover with more wrap, and refrigerate until needed.

When ready to serve, uncover and place a plate on top of the bowl, and turn the whole thing upsdie down. Serve with crackers, and a knife for spreading. This makes a fantastic appetizer.

One super simple dip is this:

Buy a small jar of ancho sweet red peppers and chop. Mix with 1/2 jar of apricot preserves, or all fruit. Add finely chopped chives. Mix well. Then pour the mixture over the top of a soft brick of cream cheese or goat cheese. Add a spreader and circle the plate with unsalted crackers. Yum!
You can mix up the flavors a bit with various preserves and other relishes. Orange marmalade with jalapeno peppers works also. And the colorful spread goes with the holiday colors.
