Okay, I have always been a meat eater. But recently I have been looking up facts on the butchering for the meat and the animal cruelty that they go through. So I no longer wish to eat meat.
Well anyway, I have been eating more carbs i.e. pasta, potatoes, breads, etc. to feel full. But, I am afraid to gain weight and inches. What I do know is that meat can be replaced with mushrooms and soy protein. I am trying to lose weight, around 10 lbs by January. Well here are my questions...
How do I maintain a healthy diet, and lose weight?
How do I handle the carbs thing?
Do you eat alot of carbs?
How do you prepare your meals?
What do you make for breakfast, lunch, and dinner?
What products do you use?
How do you cook soy protein?
What other information can you share with me?
I am a rookie at this so your information is grately appreciated. Worried of eating too many carbs seeing how "thanks giving" is coming very soon.
Please help...

First of all, let's stop demonizing carbs. Not all carbs are evil.
Eat lots of fruit, veggies, WHOLE grains, beans, and nuts. Eat brown rice instead of white, whole wheat pasta instead of white, and so on.
There are various types of soy protein--I have tofu tips in my profile, and tempeh is fairly easy to cook. There are also soy-based analogues available at many grocery stores that have directions right on the package. But you don't want to eat too much protein, as that's very bad for your bones and your kidneys.
Practice portion control, exercise, limit junk food, and you should be okay.

u dont have to eat carbs... focus on lots of veg to feel full and then add you tofu or soy product. I tend to eat alot of salads with the added protein and cheeses. Breakfast is usually carbs like cereal or fruit and yoghurt. Dinner is probably the hardest but i make alot of vege soups and have salad and veg with soy product or vege and tofu stirfry. i use alot of the vege delight options by sanitarium in the fridge or freezer section. Another good idea if your eating eggs? make a fritatta with lots of veges. I also like making a vege chow mein with lots of cabbage which is filling and i sometimes use mince substitute.

Ok....Im not a vegetarian, but have a constructive comment.
If you're worried about the impact of carbs on your diet, make sure you switch to good carbs. Only eat whole grain products like whole wheat bread, brown rice.....etc.
Everyone should be doing that (not just vegetarians)

OK first if you want to lose weight i recommend eating sauteed vegetables and tofu. If you don't like it then eat it a few more times and get used to it. Exercise daily. Push your self. For breakfast I eat a controlled amount of cereal (1/2 cup cereal and milk). For lunch I eat sauteed vegetables and tofu. For dinner I eat different foods, but I control the amount. If you want more email me.
