Surprisingly, there's not many nutrients in meat to miss. There's protein, of course, and a few B vitamins, but other than that, it's a lot of saturated fat and cholesterol, which you won't really miss at all. You can get protein from soybeans and soy products (tofu, tempeh, edamame, tvp, meat analogs,) beans and other legumes (peas, lentils, peanuts, chickpeas,) whole grains, nuts, seeds, fruits, vegetables, mushrooms, eggs and dairy products (if you're eating the latter two.)
Vegetarians do not eat the flesh of dead animals or products made from slaughter. Vegans do not eat, wear or use any products of animal origin (meat, milk, eggs, honey, wool, leather, fur, silk, etc...)

Tofu can help. Also cereal has a lot of vitamins if you get the right ones. The difference between a vegetarian and a vegan is a vegetarian is someone who doesn't eat meat, fish, or poultry. A vegan is someone who doesn't eat any animal products such as milk, cheese, eggs, or other dairy products. Some even don't eat honey because it is an animal product.

If you're eating a balanced diet, you aren't missing any nutrients.
For B complex vitamins, nutritional yeast is an excellent add to your diet. That is the only one I know that is tough to get.
Vegetarian - usually eats dairy and eggs
Vegan - eats no product associated with animals. No dairy, no eggs, no honey, etc.

The only "nutrients" you'll miss from meat are saturated fat and cholesterol.
As long as you eat a balanced diet, you should be fine.
