I'm thinking that you are curious about the chow mein or lo mein variety. But, perhaps you are also wanting to know about the different varieties of noodles themselves, such as udon, yam, rice noodles and egg noodles. Each is used in a variety of dishes and are unique in texture and flavor. The heartier buckwheat noodles are good in broths and soups, while the finer, and thinner rice noodles are great in pad thai etc. Hope this helps.

If the noodle is somewhat like a thin spaghetti, then it's probablly chow mein or lo mein as others have suggested. If the noodle is somewhat translucent, it could be "fun see" also called vermicelli or mung bean thread.

They are probably egg noodles (with a bit of saffron or turmeric)with a stir fried green vegetable (probably pak choi or broccoli) - why don't you ask the waiter or waitress at the place you are eating them - they will be pleased you are interested.
There are loads of different noodles - ask about the ones you particularly like.
