Well, the milk is easy, you just use soymilk. Butter is also simple as you can use Earth Balance or other vegan margarines, or simply use oil. As for the eggs, there are a million substitutes. Egg is used as a binding agent in recipes, so you just need to use something that can act as a binder. The most common substitutes are bananas, apple sauce, and ground flax mixed with water.

You can substitute soy or rice milk for cow's milk and there are several options for substituting eggs depending on the role of the egg in the recipe (usually binding or leavening.) Half a banana can sub for an egg, as can ground flax seeds mixed with water. There's also a starch-based product you can buy called Ener-G egg replacer. I have a great vegan cookbook with lots of yummy baked goods that were designed vegan from the get-go so there's no replacement necessary ("Vegan with a Vengeance" by Isa Chandra Moskowitz, and she also has a "Vegan Cupcakes Take Over the World.") The ice cream I've bought from the store is soymilk based (Turtle Mountain's Purely Decadent is really good) but I also have a book that uses mostly cashews as an "ice cream" base (I haven't tried making any yet.) Dark chocolate doesn't require any substitution. It's often vegan anyway, though some manufacturers put a little milk even in dark chocolate. You can find plenty of dark chocolate that's milk-free, though. I just bought a bar of rice milk chocolate that's supposed to be really good, but I haven't tried it yet. It's both a good and bad thing that vegans can enjoy all the sweet desserts we're used to - I don't have to miss out, but I also haven't lost an ounce as a vegan!

I use soy milk instead of cows' milk.
I use Ener-G Egg Replacer in place of eggs (but you have to mix it up before you put it in the batter)
I eat Purely Decadent soy ice creams. Soy Delicious makes ice cream sandwiches and bars. Both are Turtle Mountain companies. There are other companies that make good vegan ice cream, such as Temptation.
If a recipe calls for baking chocolate, you can use 3 tbsp cocoa powder and 1 tbsp vegetable oil per ounce as a substitute.
Many vegan cookbooks will give you tips and tricks on using animal-friendly substitutes.

eggs can be replaces with cornstarch and a little oil to make a paste. Whats chocolade? did you mean chocolate? What's wrong with that it's not animal!?
As for milk or ice cream there's coconut, rice, or soya forms of such!
If you want to replace chocolate there is carob. I see no reason to replace chocolate as long as the chocolate doesn't contain any animal fats! You obviously ment what do they use instead of dairy items you mentioned. I don't think you're actually asking how they cook.. cause they'd use the same cooking appliances as you.. stove, toaster oven, microwave oven or convection oven!

My sister in law makes some nice cakes by using cornstarch instead of eggs. Works pretty well, even with the cakes you make from boxes.
DOn't know the exact substitution though. IT's something like 1 T cornstarch and 2 T water for each egg.. but I could be wrong..

Soy milk or juices (if they match the flavor of the baked goods) can be substituted for the milk. So can almond milk, rice milk, even water.
Pureed unsalted carrots (like baby food carrots) are nearly identical chemically to eggs, and accomplish exactly the same thing. (Look at carrot cake recipes. Many of them don't call for any eggs, because the carrots do all the work).

Replace milk with "motherless milk" - soy milk, rice milk, oat milk, almond milk, hemp milk, etc.
Replace eggs with applesauce, mashed banana, flax seed blended with water, the store bought Ener-G egg replacer, pumpkin, etc. Lots of creative alternatives there.
Butter can be replaced with Earth Balance, vegetable margarine, oil. . .I find that these ingredients are rather arbitrary in a recipe if one wants to keep their fat intake low.
It is even possible to make vegan cheesecake. . .there is substitutes for cream cheese. :) There's really substitutes for everything.
I really feel weird saying substitutes because this way personally feels most natural to me. . .
As for chocolate, that is vegan in its natural form anyway, having come from the cacao plant. On the internet and often in health food stores, there's vegan milk chocolate. I think they use rice milk to make it.
I love vegan ice cream. It tastes no different than cow ice cream. The ice cream sandwiches such as Tofutti Cuties are exact. Some of my favorite flavors of ice cream are Rice Dream in Carrot Cake and another called Mud Pie or something. . .there are so many ice creams it's hard to choose from, actually.
There's lots of vegan cookbooks. My favorite, I think, would have to be "The Joy of Vegan Baking." There's also "Sinfully Vegan" and "Vegan Cupcakes Take Over the World!" to name a few. Stop by the "Vegetarian Cooking" section in your local book store and take a look.
Then there's websites such as vegweb.com and fatfreevegan.com
There's also lots of websites to order sweets from if you Google it. . ."vegan sweets," "vegan chocolate," etc. Whatever you come up with. . .some include foodfightgrocery.com, ethicalplanet.com, veganessentials.com, etc.

There are lots of alternatives. If a diabetic found the way to eat sugar and candies, vegans found their way too
!!!PS: Here is a tip for vegans : the famous vitamine B, the kind which is only in red meat, U CAN GET IT and no meat involved. ALL u do is eat brown rice at once with pinto beans.
! important : has to be eaten atthe same time together!
