I've been trying to incorporate more fresh vegetables into my diet, such as broccoli, carrots, cauliflower, and green leafy salad mixes...however, it's really kinda plain eating them straight up, I was wondering if you could share with me any ways to make them tastier? I make my own italian dressing for the salad, but as far as eating the other veggies, what can I do to them or eat them with? I used to dip them in a ranch dip, but that's not too healthy.

Also, any other simple ideas of preparing vegetables would be great too, so I can have them as sides for dinner. I like cooking vegetables but doesn't that get rid of a lot of the nutrients in them? Just give me your favorite ways to eat/prepare vegetables, thanks.

Just steam them on the stove. Fill the lower pot with an inch of water, fill the steamer basket with some fresh cut veggies, and place the steamer basket on top of the other one on the stove. Put the lid on...bring the water to a boil and then lower the flame. Steaming time varies depending on the vegetables and how crisp you like it. I usually let them go for about 5 minutes. When done, sprinkle them with some low-fat Italian dressing or make your own vinaigrette. Don't forget a little salt and pepper. My favorite vegetables cooked this way are green beens with thin slices of red bell pepper--when there is only about a minute left of steaming, I add some chopped tomatoes...YUMMY!

If you don't have a steamer basket you can use a metal collander--you just need a lid the size of the collander. Also, I have a Tuppeware microwave steamer that works well too.

Drizzle with a bit of healthy oil, like olive oil and choose you veggie. I like grilled egg plant and all the root vegetables grilled. For these I add garlic and salt and pepper. I like organic peppers (healthier than regular) grilled plain, the grilling sweetens them nicely.
I love grill onions the same way. All of these including mushrooms and leeks can be roasted if you do not have access to a grill. If you cook extra you can eat the good stuff for a couple of days.

Another one f or special occasions is broc. with pecans, thinly sliced red onions, chopped celery and cole slaw dressing (try for vegan) stir it up and let the flavors hang out for a few hours or over night. It is so good.

Steamed Broccoli and Carrots are my best friends and I am not a huge veggie fan. Also eating baby carrots on the go are really good. I also enjoy ripe tomatoes(yeah I know it is a fruit but don't tell that to the FDA) Potatoes, celery and carrots in pot roast is my favorite meal

Greens are good. I put a little water in a pan (instead of oil) then put a bunch of greens (kale/collard/mustard/etc) in the pan, squeeze half a lemon over them, sprinkle garlic, sea salt, and pepper over them, then put the lid on until they're wilted.

Warning: if your body isn't used to a lot of greens, you'll probably get gas at first. :D

Believe it or not, I heard hi fat mixed with nutritious vegetables will help your body absorb the nutrients better. Sprinkle some butter or cheese on it. I do and I'm pretty healthy... just don't overdue it... just a sprinkle.
