It's a lipid. Actually, lecithin refers to a group of related PHOSPHO lipids, the so called phosphatidylcholines, and all members of the lecithin group of phosphatidylcholines only differ from each other by the length of their acyl chains.
Basically, phosphatidylcholines look like a person, with the head being a phosphocholine group, the body being glycerol, and the legs being acyl chains. So the different phosphatidylcholines in the lecithin mix have different leg lengths.
