I haven't really "learned" from being a vegetarian, because its pretty much the only diet I have ever had. At the age of four (now almost 14) I chose to become a vegetarian because the idea of killing animals and eating them saddened and repulsed me. I have no regrets whatsoever. I am really happy with my choice. I am healthy and active, not emaciated or anything like vegetarians and vegans are often stereotyped to be. To people that are thinking about going vegetarian: DO IT! Getting enough protein and vitamins is not a problem if you eat the right stuff. And for missing the taste, you'll get used to it. Plus, there are tons of really tasty alternatives! It's the best thing you will ever do.

Very simple.
Humans are herbivores.
A vegetarian is a non-animal eating human living in a society where the majority of humans do eat animals and their byproducts.
There is no such thing as a vegetarian animal (no matter how many idiotic nature shows you see now saying so these days).
When it comes to vegetarianism, all around the world, either you are vegetarian (100%) or you are not. Only in N. America and some parts of Europe have all these weird different 'levels' or 'types' of vegetarians about.
If you live in N. America, get your damned head out of your a** and look around, there's a whole world out there.
Just because Chimpanzees eat some bugs and the occasional egg does not make them an omnivore. Far from it. They eat 99% fruit. We as humans are, what do they say, 99.9% genetically similar to Chimpanzees. This includes their digestive system. As humans, fruit is the best food for us, just as with Chimpanzees. It's not some kind of highly debatable subject -- it's very clear and simple.
The ones that dispute such things are the ignorant or those clinging to personal beliefs rites or rituals etc. They just plug their ears, close their minds, and say, "La la la la la... ignorance is bliss... la la la la... ignorance is bliss..." Ignorance is their religion. Ignorance holds their world together in simple terms of which they can understand without having to think too much.

Trust your gut, and don't be too strict on yourself.
I know many will disagree with me, but I don't think a totally veg diet is suitable for 100% of people - I think it would be far better for people to try and eat veg as often as possible, both for health, environmental and humane reasons.
I ate soy far, far too often and ended up with a horrible allergic reaction. I can't eat eggs, either, so every few weeks, I eat fish. I would rather I didn't, but that's just the way I feel I can reasonably get my nutrients, and I feel a lot better just trying to do what I can, and not trying to be a perfect vegetarian 100% of the time.

What I learned.....you have to be very patient being a vegetarian because there are alot of very rude, obnoxious, ignorant people out there who will try to make you feel inadequate about your life style. Take the higher ground ignore their crap and do what you know to be right for you. You do not need to explain yourself to anyone but your God and yourself.

Being a vegetarian/vegan is a personal, spiritual, dietary choice. It's not a crusade. Practice your choice with loved ones and friends and leave those who don't believe what you believe out of it.
