Ahorrar is the correct verb. If you're asking someone to save water, it would be "ahorra el agua".
You can also ask that they conserve water - "conserva el agua".

Heres the difference between ahorra y ahorrar (save )
If you say "you need to save water because... "
is "necesitas ahorrar agua porque.... "
If you say "save water dont waste it,water conservation ..."
is "ahorra agua no la malgastes ,la conservacion del agua ..."
Now if you want to put this at the restaurant.
"Ayudamos a la conservacion del agua,por favor ahorra agua ......."
"We support water conservation,please save water "
