For a meat substitute I use Boca products. The burgers and ground Boca are great and they actually taste good. I also eat Morning Star chicken stuff...it's pretty good as well. I'm not sure about the dairy I still consume dairy.

You can use tempeh (a fermented soybean cake that has a nutty chewy texture) or seitan (wheat gluten) to replace meat. Soy milk is a good dairy substitute, as is rice milk or nut milks.

Depends on what you're trying to replicate/replace, the "nutrients" (I use that term loosely when it comes to meat and dairy,) the texture, the taste?

TVP (Textured vegetable protein) is often used as a replacement for Meat.

Don't forget seitan. It is made from wheat protein (glutan). It has a similar texture to tender chicken strips and can be substituted directly in a lot of recepies. You can bread them and saute them and they are yummy.

Legumes. which are bean and rice give you all the protein you need.
