Vegan or vegetarian?
A vegetarian breakfast is ridiculously easy to eat, just stay away from the bacon, sausage and steak.
Vegan breakfasts are another story. Probably soy eggs, soy sausage and vegan bread.
Be prepared to spend A LOT of money on a vegan breakfast. Vegetarian breakfasts however, are very inexpensive, since most breakfasts in themselves are vegetarian.

Cereal and milk (or soymilk for vegans). (Soy) yogurt with granola. Some people say you should only eat fruit for breakfast. Scrambled eggs or tofu scramble with veggie sausage/bacon. Biscuits with vegetarian gravy.
Really, just cut out the meat, and the possibilities are endless.

The first answer is good. I also like scrambled tofu for breakfast with toast. Fruit, soymilk, cereal, juice. Just the normal stuff.

Milk.
Cheese fondue.
Toast with peanut butter.
Yogurt.
Banana.
Fruit juice
- just a few ideas - oh, and if you're vegetarian you can also eat eggs
