Well, my friend (and I believe my nephew), are vegetarians.....my nephew is only five years old, so he doesn't know about ''animal cruelty'' really, so I'm thinking for some people they just don't like the taste of meat....he doesn't...he will eat canned fried treat...and that's it...maybe once every month or so he'll eat a few chicken nuggets, but he hardly ever eats meat, he says he doesn't really like the way it taste....maybe some people are just like that too....Now as for the friend of mine that is a vegetarian, he lives a really peaceful life, and he stays to that diet, I'm thinking because he wants to be in good physical condition and that he wants to be healthy (which he is), and also, some people just can't stand the thought of they are eating an animal, and it bothers them, so they don't, they think it's mean, cruel, etc...so therefore the only eat plants and such.....some people may think of it as being against their religion...there are many different reasons why people who are vegetarians do not eat meat....and eat vegetables and fruit and stuff instead.. =]

Because they dont like to eat KILLED animals, who need a chance at living. And vegetarians live 10 years more than meat-eaters

Okay, that was a silly answer.
1. Some people don't eat meat simply because they don't like it.
2. Sometimes they don't like the idea of taking a life; it may be part of a religious belief or just personal feelings.
3. Sometimes they believe it is more healthy.
4. Sometimes it's recommended by doctors or dietitians because of a particular health problem. Kidney disease can make it difficult to process high protein food like meat, for example.

Considering that each person on Earth lives in their own seperate reality, the reasons must number into thousands,millions for not eating meat.
Some possilbities:
Karma-do not want to add to debts needed to pay off
Health- Better for health to eat plants than animals
Animals Rights- They have the right to live
Earth- Each cow takes up an acre of land and 1000s of gallons of water to give a pound of protein. Run offs from their manure are contaminating our food supplies( spinach with ecoli) etc
Spiritual- If one wants to reach high levels of spirituality in meditation they eat the cleanest and most simple diet.
Just a few ideas

Why do people not eat broccoli?
Why do people not eat dogs?
But I think most vegetarians have discovered that eating meat actually goes against their nature as a herbivore.

some people don't eat meat because they care about the safety of the workers
some people don't eat meat because they don't believe in killing
there are many other potential answers, it really depends on the person, you'd have to ask, them.

For various reasons; Some people simply want a healthier diet, some don't like the taste of meat. For me and a lot of other people it's an aversion to animal cruelty.

Because they are out of touch with nature.
They choose to ignore the fact that humans are OMNIVORES
being an omnivore doesnt mean you can choose what to eat (plant or animal) it means you eat both.
Its one of the advantages that allowed us to survive the ice age, our body cant function if we ignore one of those groups, which is why they have to drink pills or use alternative stuffs.
It doesent really matter why they do it, its more of a matter that they do it at all! Besides, not eating meat is how they define themselves, your question would be like me asking "why do muslims worship allah?"
Its just part of who they are

Each has his or her own reasons. Mine include my health (animal proteins are implicated in the growth of many kinds of cancer, and the saturated fat and cholesterol in animal foods contributes to heart disease and other diseases of affluence,) the health of the planet (factory farming is environmentally unsound, ranging of beef cattle is responsible for the desertification of vast areas of the American West, and egg and poultry operations in particular contribute to enormous pollution of groundwater,) and animal welfare considerations. I really couldn't come up with a good, ethically defensible reason TO eat meat.

because, in america they mass produce so much meat in slaughter houses and they are so cruel in how the animals are treated, i am a vegetarian because i do not support the cruelty to animals.
