Tabbouleh is traditionally made from bulgur which is essentially par-boiled cracked wheat. It has a decent amount of fiber.

Couscous is more processed so it has less fiber.

Bulgur has 4 grams of fiber per 100 grams.
Couscous has 1.4 grams of fiber per 100 grams.
For reference, Celery has 1.6 grams of fiber per 100 grams.

Tabbouleh does have a lot of fiber, as it is made with cracked wheat. Couscous not as much, as it is made with milled semolina flour, like spaghetti only a different shape. hope this helps.

Tabbouleh does have fiber. Its actually very healthy to consume it. Its also a good source of protein.
Couscous is basically a pasta so probably not. Its commonly referred to as a grain, but its not.
Tabbouleh or bulgur wheat is also commonly mistaken as cracked wheat. Bulgur is parboiled, dried and then debranned.
Cracked wheat is just crushed and debranned and not cooked .
