Christmas is a big entertaining day for me. Every year I entertain for about 50 bigtime eaters. I usually prepare around 300 hors d'oevours and 10 dishes for the main meal. Generally, I do somewhat upscale things such as a prime rib with bernaise sauce, mozzerella caprese with lobster meat and balsamic reduction, etc. I've started to repeat some of the dishes though. What are some other upscale dishes I could make. I'd really appreciate an idea for a main protein other than the traditional prime rib, turkey, or ham. Maybe some sort of beef tenderloin/filet mignon?

I always wanted to make a crown roast of pork. I think it looks so gorgeous! Or you could do beef wellington with some beautifully shaped puff pastry. Sorry, I don't have any recipes right now.

Beef Wellington! A classic tenderloin roast. And you can make it as upscale as you care by your choice of ingredients.
