I am going on a camp with scouts and so we arent going to have and oven, and we will have limited equiptment, but i cant think of anything.
the rules are that you must make a two course meal - either entree and main, or main and desert. Both of these dishes must include tomato in them, and you get extra points for origionality and inginuity.Also, the courses must stick to a theme. For example, italian or mexican.
I was thinking that I shouldnt do italian or mexican, because everyone would do that, but maybe if i do a fruit salad and serve it in a scooped out tomato skin, the leaders might give me extra points. but then what should i do for the main? and what could i class fruit salad under?
If you have ideas or tips, that would be greatly appreachiated!!!!

Of course my first thought was cherry tomatoes stuffed with a cream cheese and powdered sugar/strawberry jam mixture followed by tomato fritters in a pancake batter with pancake syrup...I could not do a country or theme.

Note, the Scandinavians will place over
Fried vegetable fritters (friterade gronsaker)
a garnish of sliced tomatoes and parsley,
or a dollop of mayonnaise
or tomato sauce. (Hum, onion rings and ketchup)

Southern cooks do the fried green tomatoes, fried okra, fried squash, fried zucchini ...and now you've got tempura all over the place.

I think that you could make some of the following work for a camping trip with very little effort and few cooking utensils.
You'd need a Cutting board, or wax paper and solid surface, knife.
Deep Skillet or a Dutch Oven/Cooking pot.
Some could be cooked ahead of time (eggs, boiled in shell) rice, etc and kept in cooler.

Scandinavian:

Entree
Tomato Soup
(Tomaatsoppa)
Fry in 1 tablespoon butter or margarine:
2 onions, chopped onions (might want some onion flakes instead)
Add about 4 1/2 cups stock and bring up to a boil.
Add 14-15 ounces tomato juice or canned whole tomatoes
Add salt and pepper and/or paprika to taste.
Bring to a boil, reduce no more than 15 minutes........ stirring well.
Combine 1 and 1/2 tablespoon each- plain flour and butter
to make a paste
Add to soup.
Let thicken 3-5 minutes.
Add 3 1/2 tablespoons thick cream. Stir;serve.
Can cook rice in broth before adding tomato soup then the dish is
tomatosoppa med ris.
[Quick camping version: canned tomato soup with onion flakes, paprika, powdered milk, instant rice :) ]

Entree

Green Salad with Fruit- 4 portions
(Gronsallad med frukt)
1/2 to 1 head of salad lettuce
Topped with 1 sliced tomato
and 2 oranges or 1 grapefruit (sliced or in wedges)

Dress with vinaigrette dressing with 2 tablespoons fruit juice.
Or a lemon fruit dressing:
1 part lemon juice/3 parts water plus sugar to taste .

Entree:
Tomato Salad
(Tomatsallad)

Combine:
4 to 8 tomatoes; peeled, sliced/wedged/halved
1 onion; chopped or sliced

Pour vinaigrette over the tomatoes and onions
Garnish with chopped parsley, chives or tarragon

Bean Salad
(Bonsallad)
Combine:
2 cups Cooked green beans, 3 Sliced tomatoes, 1 Chopped onion ,
Toss with:Vinaigrette
Garnish: Parsley

Main:
Tomato and Ham Sauce (Tomatoch skinksas)
In skillet that has 1 tablespoon butter: Fry 8 oz. smoked ham (sliced in stripes) with 1 chopped onion .
Sprinkle with 1 tablespoon plain flour and
Add: 3 or 4 tomatoes cut into small pieces or one 14-ounce can of tomatoes
Cook gently, tomatoes burn easily.
Season to taste: salt pepper
Sprinkle with chopped parsley.
Serve over cooked spaghetti or macaroni or boiled/ fried rice*
Instant rice would be quicker about cooking.

Main:
Sardine Salad
(Sardinsallad)
line plate with lettuce leaves
group together and lay out on plate:
Sardines;1 small can per person
1 hard boiled egg, sliced
1 tomato, sliced
Top with about 2 tablespoons mayo that has had a small amount of tomato puree added
Garnish with dill

Main: Club Sandwich

3 slices toasted white bread, toasted, buttered
2-3 slices meat cold chicken/turkey/veal
1 to 2 leaves, shredded lettuce
2 slices; chopped bacon
3 - 4 slices tomato
1 tablespoon mayonnaise

Layer :
bread spread with mayo
meat
bread spread with mayo
lettuce
bacon
tomato slices
bread

Cut into half diagonally. Two servings.

Hello lisseth:

Remember that Scouting is supposed to be fun. Also, no one wants to spend 20 hours of a 24 hour campout cooking.

Make it simple, make it fun. Make your goal be to make a nutritious meal that tastes good, fills you up, and is easy to make and clean up after. Forget about focusing on the completion, but focus on making a good meal.

Gazpacho salad:
Diced tomatoes, diced onion, diced cucumber, cilantro, oregano, dill, olive oil & light vinegar. Serve in a brightly colored bowl, with a whole fresh oregano leaf on top, and two to three slices of bread. try flat bread if you can get it, or pita.

Stuffed tomatoes:
hollow out tomatoes, fill with pre-cooked rice and ground meat plus the inside of the tomatoes. flavor the rice/ground meat with black pepper, light sea salt, paprika and cumin. Steam the stuffed tomatoes for 10-15 minutes to soften the tomato and blend flavors, but do not overcook and make mushy. Remember presentation counts high; the tomato should stand on its own, and not be mushy. Proper spicing lends greatly to a meal. Serve with a green vegetable such as green beans or zucchini squash to liven the colors. Corn bread or corn chips go nicely.

Sounds like dutch oven cooking to me ! Coals on top and bottom of ovens . Beef stew?? You can bring everything prepped . Biscuits?? Fruit cobbler All adaptable/appropriate for Dutch Ovens. Show them how it's done!!!

Fruit salad could be a desert. American catagorie along with hot dogs or if you have any pans cheeseburgers,
