It's delicious! Not only is it a part of southern and black history it is also a delicacy amongst the french. They roll the intestines in a large one and make it into a sausage which can be grilled and served with a mustard sauce. My mother used to always add a little mustard to her chitlins on her plate. I only get to eat them once every 5 years or so and I miss them. The smell, the texture, the flavor. Just wonderful, and I love pigs feet too. A little hot sauce and bob's your uncle.
Those who don't like it, can leave it alone, there are enough other options, like mountain oysters.

Calm down! You put enough onions and spice in there, it can taste pretty good. Fish and other kinds of meat smell the same, it's just that you're used to it and the smell has gotten acceptable in your mind.
There is a history behind the culture of every food. People ate chitlins and lever because they were poor and those were the parts nobody else wanted, so they could have 'em.

Every culture in the world that eats pork has a chitterling dish.
It takes a lot of work to prepare it correctly, meaning cleaning out the intestine.
I agree. If it's not cleaned properly it's the worst thing ever where you'll be smelling and tasting that stuff for days.
The only way I like intestines is when they'be been cleaned out and made into sausage casings. Old-fashioned hot dogs and hot links are the best way to eat pig guts.

Well, brother, now you know why blacks still resent having been slaves!! But I'll be honest with you, it's not a generational thing, but your great grandfather comes from a time when poor whites had to eat chitlins too. Polk salad, ham hocks, chicken feet, and all that stuff is known as 'soul food' which actually means 'poor folk food'. My mother came from Kentucky. I grew up eating chitlins. They're good. But I eat sushi, goat, balut, and everything else. Try it. You might like it. Durian smells bad too, but it's great.

There is only one good way of cooking pig intestines, that is cleaning them out, by rinsing them really good and getting all the stuff out, then boiling them in water with some salt, strain them and let them dry up a bit, then u fry them and add whatever seasoning you like. I love them they taste kind of like pork rinds/bacon awesome when mixed with meat (cow) also NO THEY"RE NOT ONLY IN African American Cuisine!

i agree that **** is the most disgusting **** in the world. actually chitlins came about because the slave owners had to feed the slaves so they gave them the most disgusting part of the pig that's why I do not eat the ****. as well as pig feet, ears, tails and snout.

I don't eat them but my mate does, I clean then cook them. It so nice to know that you had the privileged of not having to eat them, They are po folks food, when its all you have its all you eat, And you'd be surprised at how many rich folks now eat them

My mother makes them every Christmas! And their gross, I never tasted them and I'm 33. The smell is atrocious, it smell like a rotten animal. It makes you want to vomit ! I can stand when she cleans them. They get every where, it's so disgusting.
