With large cuts of beef, the longer they cook, the more tender they become. A brisket will fall apart when cooked for 8 hours in a 250 oven. Try a 2-3 lb shoulder roast at 350 for 2 1/2 hrs.

Start with a good piece of beef such as eye round or silver tip as they are the most tender for a roast. Apply coarse black pepper over entire roast. Quarter 6 med. sweet onions and wedge under roast. Pre-heat oven to 450, pop in roast for 20 minutes at this heat. Next, reduce heat to 350 and pour 1/2 cup of good red drinking wine over the roast, pop back into oven. If you like it rare, allow 5-7 minutes per lb, med. rare= 7-8, med=9-10 and well 10-12. If in diubt, get a meat thermometer and it will show you the interior temp of the meat. It will give you the reading in terms of doneness.
Every 10 minutes or so, baste the roast until it is ready.
As an aside, slow cooking beef is best left to a rotisserie or a crock pot as these are the only 2 methods that will not dry out the meat after a long period of time. For the chef out there, you may put a silver tip on a rotisserie, idoubt you would put it in a crock pot.

The best roast beef, is as everyone mentioned, to be cooked
very slowly, for a long time.
I love to use my BBQ rotisserie, I baste the beef with olive oil,
garlic and herb as it cooks, the smell is divine.
Time will depend on size of beef roast you are cooking.
Only prob I have is stopping all those males opening the BBQ up and poking and proding and picking at the beef, while it is cooking.
Otherwise I oven roast my beef in an oven bag. I always
shake alittle seasoned flour in the oven bag, this helps to make a great gravy once beef is cooked.
But my family love the summer BBQ roasts, the smell is just so divine as it cooks and the beef truelly melts in your mouth.

Pot roast is slow-cooked for hours. Roast beef is roasted.

Salt and pepper
Sear on both sides with hot oil in a large pot
Add 1 coffee pot filled with 1/2 leftover coffee fill the remainder with water.
Add 1 PKG onion soup mix
Simmer covered for 1 1/2 hours
You can add cubed potatoes 1/2 hour befor it's done.
