I'm making spaghetti for dinner tommorrow. I'll be using a slower cooker. I already put mushrooms, tomatoes, peppers, onions, celery (sliced very small), and grated carrot in my sauce. I also put in, garlic powder, italian seasoning and parsley.
Any other suggestions for other vegetables I can put in my sauce?

Zucchini is fabulous. You could also try broccoli or cauliflower. Those aren't my fav's but I have tried it. The zucchini however, is wonderful in sauce!! Especially a little grilled first... Good luck :D

You are making a vegetable stew, and not an Italian spaghetti sauce.
The real spaghetti sauce only needs some olive oil, garlic and the very best fresh tomatoes you can find, failing which, get some top quality Italian canned peeled tomatoes.
Basil laves, added at the end of the cooking and infused in the sauce, salt and may be some chili powder for an "Arrabbiata" version of your tomato sauce is all you need.
I'll bet you anything this authentic and much simpler way will beat whatever you make by your process.

I guess this must be an American version of a spaghetti dinner. Sounds like you are experimenting, just remember some times too many ingredients spoil the sauce because they can conflict with each other or cancel each other out so your sauce winds up becoming bland.

I'm vegetarian and I wouldnt use mushrooms for slow cooking like that 'cos they tend to toughen up but I'm sure yours will be fine..
A little bit of sugar and lemon juice adds something to a tomato sauce.
I may put thinly sliced carrots in there too...

They both are Perfect for your health. If you eat both, you're better off. But yea, I've choose fruits because they taste better.

you could take it a florentine route with some fresh spinach (though you have to clean it well first to get rid of the sand or just go with the stuff in the bag)
perhaps some roasted red pepper (either canned/jarred or make them yourself. for instructions, go here: http://www.ochef.com/158.htm)
but otherwise, it looks pretty good.

finely chopped black olives give marinara a good flavor.
I always add zuchini to mine if I have any. Doesnt really change the flavor but does add valuable nutrients.
