I could help. My dad has a Chinese restaurant, but I don't observe too much. It might be somethign from Szechaun, where lots of dishes are mad spicy! My dad also uses dried chili peppers and red and green peppers, too. And dear Tuck, as Aimee J said, Wasabi (1) is Japanese (2) is not a pepper (3) is green! (4) if you mix it in with rice or something, it just blends in with it and (5) as far as I can see, my parent's friend's restaurants do not use it and my parents don't use it for their restaurant either! As far as I know, no Chinese restaurant uses wasabi!

I like a little hot pepper in my Chinese dishes and also in soups and stews, too.

I visited an Asian grocery store today. They had packages of the regular hot red peppers, Serrano chilies, and then little green Thai peppers. I asked the produce man and he suggested the Thai peppers because he said they are VERY hot.

Go to an Asian or Mexican market if you are looking for chilies. Try the various kinds -- you'll learn which kind you like.
I was all out of fresh hot peppers. So I bought a package which is much more than I need and will use one tonight (minced and in my bowl of noodles) and freeze the rest of it and take one as I need it.
