I'm making a casserole and I need some help. It's going to be kind of like macaroni salad. So far it includes macaroni; bacon bits (yes, these are vegan); green peppers; Italian dressing. Any other ideas of things I can add to it? As for a topping, I thought I would make some garlic bread and cut it into cubes and sprinkle it over the top. Yes/no? My biggest challenge seems to be the lack of cheese (but please don't suggest soy cheese because I'm not going out to the store again and I don't have any at home).

You could try adding sliced mushrooms, green and yellow squash, grape tomatoes, for a real 'colorburst'.

The garlic bread cubes sound good, try sprinkling some fresh parmesan on top for an added kick.

Chopped tomato, diced onion, bits of brocolli, some julienned carrot. I would just eat the bread on the side, and not put it on the salad.

You could add some slivered almonds, diced tomatoes, and black olives. I don't know about the garlic bread, wouldn't it be too "squishy"? Maybe if you toasted it first, to make it crunchy.

Hope I've helped.
