I use plants as centerpieces and give them to the guests. Small native trees (labled with care instructions) in pots with the soil topped with decorative moss look good. Scatter small polished stones and mini pumpkins around the base of the pots to continue the natural theme (as well, using the pumpkins as place card holders is fun). You can carry the "green" theme further by using an unbleached twill or muslin fabric for the tablecloths. If it is not a very formal affair, your guests like a bit of a rustic theme this time of year.

A potted plant. Then people can take the plant home with them after the event. Plants help clean the air. With fresh cut flowers, they die in a week or two.
If it's a fall/halloween theme, you can put gourdes and pumpkins on the table, straw, leaves, twigs, etc, put some in a glass vase.

I completely missed the fact that balloons are an environmental hazard. Now I wonder what else I've done to destroy our planet.

What kind of event? What time of day?
Candles could be nice. Fresh or dried flowers or this time of year, a horn-a-plenty with gourds and tiny squash would be pretty. A pretty basket with fruit would be nice too.

Yes live potted plants.
I'm trying to do my part by encouraging everyone to have at least one live plant in each room, especially if it's air conditioned. If you want to know the best plants? Please use NASA's Clean Air Plant Study as a guide. It can be found at: http://www.zone10.com/tech/NASA/Fyh.htm
