How about cheese, hard boiled eggs ( you can use free range). I was surprised to read that egg whites have a very high nutrition rate. My grandson is a picky eater and has a hard time finding school lunch food. Veggies and fruit, of course. Have you tried the Morning Star chicken strips. You can just heat them in a skillet and cut them up with veggies for a salad, or use them for a sandwich. My daughter is a vegetarian and I have fixed her the chicken strips. I tried them and other soy stuff and these are the best in taste and texture. Don't forget to drink milk for your calcium.

PBJ is always an option. You can also buy veggie deli "meats," though most of them taste a little funny. A BLT with fake bacon is delicious, and only takes a few minutes to put together.
You should always put some fruit in your lunch, maybe with some cottage cheese if you eat dairy. Crackers and granola bars are always good, too.
If you're willing to do a little bit of cooking at night, you can make lots of meals which taste fine unheated the next day, such as lasagna, in my opinion grilled cheese (with real or fake cheese), and various others.

im 28, veg for 12 years, and have always made my own lunch. i still do!
my typical lunch is usually...leftover veggie meal from the night before (pasta, macaroni, etc). or a sandwich made with bread, cheese, and a morningstar griller or boca chickn burger; or morningstar chik nuggets with ketchup; or a lean cuisine/smart ones meal that has no meat; or a vegetarian soup on cold days (you can buy the campbells vegetarian vegetable) i usually have a bottled water or soft drink plus some crackers or fruit on the side.

There is a site veganlunchbox.com for some good lunch ideas. It's put together by a mom for her son who is a little kid, but you can get some general ideas and then just make the proper adjustments.

Me too, so here goes.
Make sure you get your protein.
Hard boiled eggs are great, also tuna and salmon,
so you could make a salad, with another container of tuna, or salmon, to fix it with.
Vegetables of course, also avocado is good source of protein so, this goes great with crackers.
Fruit of course, if you had all fruit for lunch or all vegetables this would be a good choice, although I need some bread each day, otherwise I feel hungry.
Make sure your bread is wholegrain, and make sandwiches, salad, tuna, egg, salmon, cheese,
Sometimes you can have leftovers from your dinner, cold chicken is good, with salad, or a bread roll.
Drink plenty of water, 2 litres a day.
I always find something mid morning and mid afternoon benefical too. If you love fruit, then that is good for keeping the blood sugar level in balance.
All the above is not difficult and not time consuming so you will have a good lunch in 10 mins.

if you in high school take a bottle of water or cordial as a drink.
a nice peanut butter or chocolate spread. Or you could make yourself a nice healthy sallad sandwich with lettuce and tomato.
some fruit and/or nuts. they are good for you.
maybe a nice carrot or something will do.
you can also take a muesli bar.
thats what i take. the choice is yours now!

I also REALLY like Japanese nori maki (sushi rolls) for lunch, and noodle salads. In the autumn/winter, I make tons of stews and soups, and just bring these for lunch w/ fresh bread. I like hummus and veggie and cheese and veggie sandwiches immensely as well. I do like and eat fruit and yogurt as well, but I find I need to eat it separately, as a meal all by itself, b/c it's a really bad combination w/ starches and proteins, and upsets my tummy. Mixing fruit and beans is NOT a good idea, ever, for me at least, and anyone who sits near me...I also like pasta heated up for lunch and bean and nut loaf w/ mashed potatoes and gravy and veggies. Shepard's Pie is great in the cold weather, too, as is anything hot or warming. You can use bulghur or TVP or mushrooms in place of the meat. Email me for recipes, if you like.

You could always make your lunch the night before.
Pack fruit. It's easy and comes in its own wrapper. :)
Granola bars are a great thing to take.
You could have peanut butter sandwiches. They're easy to make and offer you protein.
Nuts.
You could cut up veggies the night before and take them as well.
You could also make salads.
