I like to follow a Flexitarian Vegetarian diet that is balanced and moderate. I'm an 80/20 flexitarian vegetarian most of the time ... the 20% meat is mostly fish, seafood and poultry. On rare occasions I may eat some red meat. The 80% is mostly fruits and vegetables from the countries I am visiting. I must admit when in Italy, I do love the pastas.

Food.

I adore tofu. I have a couple of recipes that I'm going to keep in my recipe box for anytime I'm feeling lazy and need a simple tofu dish.

I also adore potatoes--russet potatoes nuked and slathered with Earth Balance.

I like haricot verts and sugar snap peas and pea pods and --

You see where I'm going? There are just too many good things to eat!

I like soups and stews, I am not veggie but I love to cook veggie food, I'm in the middle of trying to find a decent vegetarian pie recipe at the moment but they all seem to be the same, lentils and cheese!

hmm.. one of my favorite lunches is sweet and sour tofu over rice


i just chop tofu into little cubes and mushrooms into small pieces. Mix together in a bowl big enough to stir... add soy-sauce, ginger powder, thinned out Sweet-and Sour sauce, black pepper, a dash of garlic powder. Stir so all tofu-mushrooms are exposed to the sauce. Let it sit in the sauce for a few minutes

Then dump the contents of the bowl into a nonstick skillet that has a TINY bit of sesame oil allready hot. Add more thinned-out sweet and sour sauce and "fry."

When done cooking, spoon the tofu and sauce mushrooms over rice..

Eat with small squares of seaweed!

YUM!!

Had it for lunch yesterday.

Well, I'm pregnant right now, so I like a lot of various foods. The foods I crave most are pickles, salt & vinegar chips, grilled cheese, pasta w/ tomato sauce, cheese pizza, oranges, things like that.

Bean burritos, veggie chili on a tofu hotdog, raviolis, cheese sandwiches, fruit, vegetable stir-fry, the buhda dish at the Chinese place, salads, etc etc.

Most of the things that i am deigning myself right now because I'm trying to lose weight. grrr
was 191 lbs down to 175 lbs so its working yeahhhh
