There are meals that are called "Amy's" that are pretty decent and a lot of them have vegan options.

There are a lot of vegetables which cook fine in the micro. Better to eat healthier if you can instead of microwave meals/TV dinners. One thing I make a lot in there is acorn squash--just cut in half, discard seeds, put on a plate, (the plate has to have about an in. of water in it first, ) and put the squash face-down. Cook for about 7-8 minutes. Season w/ salt and pepper and it's great. Some people put butter, and cinnamon though. Cook any other veggies in there as well, you can cook eggs as well, and pasta in the microwave as well.

If the crockpot or a toaster oven isn't an option, get yourself a copy of Sarah Kramer and Tanya Barnard's "Garden of Vegan." There is a section of microwave meals and tips for students living in dorms. I think there are also Starving Students vegetarian cookbooks (but watch out; they list Worcestershire sauce as ingredients, and it's not vegetarian).

zatarins makes boxed meals of rice and beans that can be cooked in the microwave. i used to eat those when i lived in the dorm and i really like them. they make a regular boxed kind and a microwavable kind, but i didnt think the microwavable ones tasted as good, so its worth it to get a bigger dish and some olive oil to make the boxed kind in the microwave.
you can also get bagged frozen vegetables that you can cook in the microwave. the kroger at my school sells plastic covered potatoes too so you can make baked potatoes in the microwave (though i think you can just use regular potatoes covered in plastic wrap).
just be creative, you can cook any canned foods and soups in the microwave, and most stove-top foods have directions for microwave cooking as well!
one more thing, the cookbook, the garden of vegan has a section on vegan cooking in microwaves, so you might want to see if you can get a copy of that. good luck!

I love to cook, and I know firsthand that a microwave is a very poor instrument for making delicious meals. I only use mine for warming up leftovers and that's about all they are good for.
I know this isn't quite what you asked for, but I think you should also consider spending $20 on a slow cooker/crock pot They are wonderful to cook with, and only need to be plugged in. I really wish I had thought of using one when I was in college. The downside is that you have to let it cook all day, but I always just make everything up when I wake up in the morning and it's ready for me when I get home from work.

THE BEST CURRY IN THE WORLD..
Follow this recipe and you will not be disappointed.
Using the Australian metric measuring
you will need
2 tablespoons of canola oil
1 medium sized cauliflower
2 chopped onions
2 teaspoon of finely chopped ginger
2 teaspoon of finely chopped garlic
1 tablespoon of tumeric
1 tablespoon of cumin
1 tablespoon of curry powder
2 tins of chopped tomatoes
1 tin chickpeas
70ml of coconut milk
1 cup of peas
first remove cauliflower flowers from the stalk. wash.
Saute chopped onion, garlic and ginger in 2 tablespoons of oil for 1 minute, remove from heat, add spices and saute for a further minute. Carefully fold cauliflower in to the mix. Pour both cans of tomatoes over the mix, stir very well, put on low heat and pop a lid or some alfoil on for 15 minutes, stirring every 5 mins (do not leave too long or the cauliflower starts to fall apart). Then add the chickpeas, peas and coconut milk, stir and leave for another 5 mins wihout the lid. And serve with Basmati rice (which is okay to freeze).
Seriously this is the best recipe in the world and very very easy to make.

Buy salads. Eat a lot of fruits and for protein, eat beans or something. It's also a lot healthier. They don't need to be cooked. If you want, you can make pancakes, muffins, and cakes for treats. Cut up fruits like mango, kiwi, apples, grapes, strawberries, oranges, pineapple, and watermelon for a meal. Buy rice - you can buy packages that last a long time.

I dont use microwaves, they dont feel natural to me : )
I just eat meals that are fine raw if im away from the house, like at work. salad and sandwiches and the like.

get over it....all the frozen veggies at the supermarket are microwaveable....don't be so anal about this...god made animals and food for the natural food chain and us humans are noteably meat eaters....why deny yourself....you wont save anything...not now and not ever...but the frozen veggies are really good if you must....there is so much more important things than professing your veganism....good grief get a dang grip....and ******* eat
