When I make a sandwich I load up on tomatoes, lettuce, onions, and pickles and then throw some avocado on there with a little mustard. I never feel like I'm missing the meat AT ALL. When I make lunch even my meat-eating friends rave about how good a sandwich can be without lunchmeat and one friend in particular won't even order a meat sandwich from Subway any more after tasting how good a veggie delight with exra tomato can be!

For tacos, try using refrief beans instead of meat. If you want to really go gourmet, make some seasoned jasmine rice to add, too. Pile on the the chopped tomatoes, onion, maybe some salsa and guacamole, and you won't miss the greasy meat!

When it comes to burgers there are a lot of really good substitutes out there that taste way better than a meat patty and you don't have to worry about biting into a piece of nasty gristle. I like the veggie varieties over the soy patties, but sample what's out there and see what you like. I highly recommend Gardenburgers (the vegan variety for optimum health), Morningstar Vegan Grillers, Sunshine Burgers (made from brown rice and sunflower seeds), and Fantastic World Foods' Nature Burger dry mix. At a restaurant try adding an onion ring in place of the patty - so good and a couple onion rings are so much better for you than a cholesterol and fat-laden processed beef patty!

You're making a smart choice to look to eliminating meat from your diet for health. Even lean meats contain a lot of cholesterol. Cholesterol is nature's way of saying "Hey, don't eat that or you're going to end up with heart disease!" Another sign from Mother Nature not to eat meat is how repulsive it is in its natural state. We have to do a lot to it to make it appetizing and taste good otherwise it's just nasty and bloody and gross and stomach-turning (oh yeah and harbors bacteria that can make us sick - another clue!). And yet ANOTHER indicator from Nature not to eat meat is how we can look at most animals and think they are beautiful/cute/noble/whatever and want to study them or pet them - we do not have a natural urge to kill them and sink out teeth into them!

Good luck to you!

I eat beans (such as black bean soft tacos).
I also eat spinach in place of meat in certain instances (like spinach lasagna -it's excellent!).
You might want to try plain pasta...large stuffed shells (with the likes of parmesan and ricotta cheese) are also easy to make.
Stir-fry is simple and delicious when it is meat-free. Lo mien and fried rice are both easy. As long as your veggies are fresh, you still receive enough protein, vitamins and minerals.
Morningstar Farms, Bocca and Gardenburger all make decent meat substitutes....like sausage, chicken and ground beef.
Other options are tempeh, seitan and tofu....just do your research first and find some good recipes....doing those the wrong way could be rather unappetizing. (haha)
Good luck!
