Blue Bonnet Light Margarine. Nowhere near as expensive as "real" vegan butters, but still vegan, just the same.

Earth Balance is by far the best one I've found. I grew up on real butter and could never stand the taste of margarine, so I was skeptical. But it's non-hydrogenated and tastes pretty darn good. I thought I'd just use it for cooking, but I've spread it on toast and it passes the test.

Smart Balance buttery spread, its made from vegetables, oils, and legumes not dairy.

I use Earth Balance spread for my potatoes and Willow Run sticks for baking.
