Flour is not unhealthy nor is oil in small amounts. You need fat to survive, you just want to eat the right amount of the healthier kinds.

Use whole-wheat flour to get the best nutrients you can out of flour, and use canola oil since it is mostly "good" (ie unsaturated) fat. Olive oil is also mostly good fat, but the flavor is too strong for baking.

Well, dough is pretty much flour and water, maybe with a bit of oil. So you can't make dough without flour, and you probably would have difficulty if you made it without oil.

If you want it doughy like regular dough then you have to use flour. I believe they have gluten free flour. it really depends on what you are trying to make. I use almond flour to make cookies. After I make milk from almonds I dehydrate the leftover pulp and and use it for flour. I mix it with flax seed meal, dried dates ( all in the food processor) and make a pie crust with it. You should check out the raw food vegan diet. i love it.

Can you make dough without flour? What kind of dough? You can make a dough from vital wheat gluten and water....it makes a very thick bread-like product.
