You don't.

Statistically, anemia is equally prevalent in both meat eating and vegetarian diets, meaning, one group does not get anemia more often than the other.

Unfortunately, when meat eaters get anemia, no one thinks twice about it, but when a vegetarian gets it, the meat eaters like to use it as "proof" that we need to eat dead animals. Of course, if a vegetarian gets a cold an animal-eater will tell you it's because the vegetarian didn't eat meat. Oh well.

Here is the good news.
:)
Vegetarians don't need to take vitamins any more than meat eaters do. Anything a body needs that can be found in animal flesh can be found in from vegetarians sources... and I don't mean super special fake meat products either. Iron, and everything else, can be found in regular vegetarian foods.

Anemia is an iron deficiency, not a meat deficiency.
Here is some info about iron and iron food sources.

Dear Heart do not fret. You are fine, RARELY does a person become anemic from being a Veggie or Vegan. So it certainly will not happen is a few days or weeks. Unless you are already that way. I've been a Vegan most of my 56 years. I do not eat meat substitutes but I do use a Liquid B-12 I get from The Vitamin Shoppe(yummy raspberry flavor). not because I have every needed it, but it give me extra energy. Keep in mind you must eat a good diet with lots of fresh foods, and as little "junk" as possible. After you have been Veggie awhile consider Juicing & doing Green smoothies. Both are nutrient pack & lovely to drink.

If you're eating properly, you need never become anemic after giving up meat. Even if you don't have any iron-rich foods in the house (green leafy veggies like kale, pears, peaches, apricots, whole grains like wheat and oat bran and millet, fortified cereals, pumpkin, nuts and seeds, soy beans, lentils, kidney beans, eggs, blackstrap molasses, sea vegetables) you are not going to become anemic inside of a week - unless you were well on your way before giving up meat. Iron deficiency goes in stages and the first would just be a lowering of blood iron levels. Once you start eating iron-rich foods again, you can bring your levels back up well before progressing to actual anemia.

It is 38 years since I gave up meat, and about 10 since I became a vegan, I have never been anaemic (except for a short time following treatment for a serious illness, which happens to vegetarians and meat-eaters alike), and I have never taken iron or any regular supplement.

You'll be fine.
