Other than soy butter, as I do not eat soy either. I'm looking for something that is similar in texture and taste to butter, for spreading on food, cooking french toast, etc.

You could try these:

Flax oil: Use it as a topping for potatoes, rice, popcorn, etc. Note: DO NOT cook with this!

Nut butter: Can be made from almonds, cashews, or other butters. Use the same amount you would for butter.

Applesauce: Use for sweet baking only. Use the same amount you would for butter. Especially yummy in brownies! For muffins, etc., replace up to 3/4 of the butter with applesauce, using vegan butter for the rest.

I'd like to add peach, pumpkin and apple butters for spreading on food to the list (check label for veg*n safe ingredients).

Olive Oil can be used too, but it isn't like butter. I don't use the extra virgin for frying, I use the regular olive oil for that because evoo tends to smoke.

Edit: I found this recipe: Rice Dream French Toast

Makes 2-3 servings.

Ingredients

* 1 1/2 cups Rice Dream Classic Original
* 4-6 slices whole wheat bread
* 3 Tbs. arrowroot powder or 2 eggs
* 3-4 Tbs. oleic safflower oil or butter
* 1 tsp. cinnamon powder

Instructions
In a wide bowl, whisk together Rice Dream, cinnamon, and eggs or arrowroot. Cut bread into triangles; soak bread in the Rice Dream mixture until softened, 1-3 minutes. Heat portions of the oil or butter in a frying pan or griddle, over medium - high heat. Add several pieces of the soaked bread; do not overcrowd the pan. Cook evenly on both sides for 2-3 minutes or until each is browned. Serve immediately with your favorite fruits, jam or maple syrup.

The best replacement I know of is Smart Balance margarine. It contains no trans fats or hydrogenated oil (which most margarines are high in), and it actually tastes pretty good. It isn't that great for baking, though.

There is simply no substitute for butter for taste or texture. If you are worried about the fat content just use less. The only alternative I know of is margarine and that is basically like eating plastic.
In cooking use a mixture of butter and light olive oil.

I use Earth Balance while eating and Willow Run sticks for cooking and baking. Many margarines also contain milk proteins. Earth Balance and Willow Run are both vegan.

I really don't know of a non-soy vegan margarine, I'm sorry to say. I know there are corn-oil spreads, but I'm pretty sure they have dairy ingredients in them.

There are some which are made with olive oil as their main component. They do not contain soy or dairy. They're okay tasting for spreading on stuff, but they don't work for baking. Most grocery stores should have one or two, or you can try a health food store. I know Stop&Shop carries some.

Hope this helps.

Margarine. If you want to cook french toast in a pan and don't want to use butter or margarine then use Pam. It will keep the french toast from sticking and still give it a good taste.

First I would like to state that Margarin is NOT a good alternative. It is typically high in trans fat.

I like to use organic coconut oil. It usually comes in a jar and is not a liquidy oil, but spreadable. It is one of the best oils for your body and adds a LIGHT taste without being over-powering. When I make any sort of pasta I like to mix a little bit in or even use it in a pan when I sautee.

Oil (olive, canola, or vegetable) is an excellent replacement for butter or margarine in practically every application.
Shea Butter butter is a replacement for regular dairy butter in foods, and a perfect replacement for dairy butter in cooking for vegetarians.

Something that's heart healthy. Check Whole Foods or a similar store. Smart Balance, I think is the name of a product.
