I can't see the DV codec as an option in any video capture software when I am using 2003 server. Is it user error somewhere or is it just not supported?

It can,but you ned to install it yourself.

Think logical, 2003 Server, is designed to act as an server for office, why would some one use it for video editing ? when you have a server, it suppose to support workstations, hence XP/2000/Vista .

Best server for dealing with DV is an Xserve from Apple - they can run Windows too.
Macs do video better than PCs. Application you would be looking for would be Final Cut Studio

i think of it extremely is the utility, the only i prefer to advise is Adobe ultimate factors. it extremely is the intro suite for Adobe ultimate professional. i do no longer use movie maker so i'm not sure if the determination can be replaced.
