Roast beef with roast potatoes and roast fennel. And slow roasted tomatoes with balsamic vinegar.

nothing! i'm having a 'girl's night in' with some friends, so we will just drink wine and eat a ton of appetizers... so far i have planned to make cheesy wonton cups, sausage balls, a cheese ball and an antipasto platter with my home made garlic roasted peppers, mozzarella balls, assorted olives, prosciutto and mozzarella balls. one of my friends is bringing crockpot meatballs. there will also be some cheese and crackers, and some rustic bread in case somebody wants to make a sandwich using the antipasto stuff. somebody else is making a chocolate cake and somebody else is also bringing some kind of dessert.

Ground beef enchalidas. I'll add, sliced black olives, chopped green chilis, and mexican cheese blend. Top with Hatch fire roasted enchalida sauce and more cheese. Bake 20 minutes @350.
