I too am a former chef and travelled for years to other provinces in Canada and Asian and a stint in Jamaica, correct with all the terrorist issues they will have to be secured and checked, but I recommend a sturdy tool box like those for construction or mechanics. I have mine along with other 35 different carving pieces in my old box.
Go to a good hardware or automotive store get one with a removeable top tray for paring knives and small tools, and a good size bottom, for travel I always wrapped them in newspaper, so the are not tossed around and dull there edges, and make sure you have a sturdy lock on the box, a good heavy padlock, over 3 inches in size, even a decal saying your a chef or a notice there for hotel use.

Do you have a knife roll/case you can store them in while you move? Am assuming you already do if your a chef and would have paid a fair amount for decent knives. My kitchen knives don't go travelling so I can't vouch for these :)

Great question I just traveled and did not take the chance to bring my knives Had to use what was available not my Shun's Does any one really know the answer . Not opinions or guesses!!

According to TSA (see link below), you cannot have the knives in your carry-on ... but you probably knew that. They are allowed in your checked baggage.
I'm assuming that you're worried about theft or lost/misdirected luggage, but if you're going on public transportation, it's a risk you'll have to take. Obviously if you're traveling in your own car (private transportation of some form), you can take all your knives in the trunk of your car.

I can only speak about the laws in Australia. Your knives need to be "covered" and checked in with luggage, and you must state at the time that you have knives in shields.
They can't be taken on board with you.

You can make a roll up just like the ones that make up artists use to store their brushes. This way you can make it to fit all your knives.

wrap it up carefully and place it in a secured luggage. you can box it as well. but you must check in this luggage, you are not permitted to carry them onto planes.
