Have you been using skinless chicken? because that is going to help alot if you start using the skinless chicken. also if you are going to be baking it in the oven try getting a baking rake to sit the chicken on so its no sitting in the grease. maybe try cooking it on the grill too. you can also find some really tasty dishes to make with chicken using a slow cooker/crockpot. Either grilling the chicken or broiling it lets the "grease" drop away. But if you're just baking it, it's really not grease but the juices. Oven- or pan- frying it adds grease.
Add bbq sauce toward the end of grilling or broiling time for extra flavor. If you put it on early, it just burns because of the sugars in the sauce.

Either buy skinless, or remove skin prior to cooking. Try this if you would like a BBQ taste that is different, but tasty.
Chicken pieces, (skinless)
1-cup ketsup
1-16 ounce of cola
salt and pepper (optional)
Place chicken pieces in skillet. Pour the ketsup over the chicken pieces, pour on cola, and place lid on skillet. Cook chicken on medium heat for 30 minutes. Remove lid and continue cooking another 30 min, turning chicken occasionally to coat with sauce. Salt and pepper to your liking. As sauce thickens, turn more often to prevent sticking. You may substitue diet cola, but I prefer regular. The sugar cooks down to more of a syrupy stage near the end, but either one will do fine.
You are not cooking in oil or fat. By removing the skin you are reducing fat as well.

Go get a simple roasting rack to place in the pan. The chicken will not sit in the grease that way.

I use a broiler pan (allows the oil to drain off) in the oven.. set it at bake 350F.. and I spice up my whole chicken.. you know, with a spice rub.. or just salt,pepper, garlic powder, and oregano, or like a cajun spice rub... then set the pan in the middle section of the oven and bake it for 45min till brown and crispy skin.. all the fat drains down into the pan of the broiler pan and you end up with nice crispy skin and tender tasty baked chicken...

Bake it on a rack so the grease drips out. I do this with chicken after I fry it and the grease is lessened greatly!

If you boil the chicken whole or cut up, then when it cools all the grease will rise and you can skim it off. The boiling really makes it not greasy. If you want, you can bake it after and coat with bbq sauce or other sauce. You can do this with chicken breasts or whole bodies.

place it on a rack in the pan it will keep it out of the juice also, I love my rotisserie. .in the rotisserie you can cook the chicken whole/ Also, they make a rack you can put a can of beer in and set the whole bird on it You don't have to use beer but it will let the grease drain into the pan while the bird is cooking

The way my mom makes it she fries it in it own grease. she seasons it with some salt and cooks it. it comes out just dry and tastes so good with a salad and some cauliflowers as a side dish. Really Healthy and good.
