This is easy and great. First of all you need to follow 5 rulles.
1. GOOD BREAD: Choose a beard that can stand up to being cooked. Your standard sliced wonder bread won't invest a few extra cents and buy a nice Oat, Sunflower or Whole wheat fresh baked bread.
2. BUTTER: Real butter, not margarine or anything else. It burns easily so you have to cook your grilled cheese slowly. It is the only way to make it good.
3. CHEESE: There are other cheeses besides american. Never use a oily cheese like Cheddar, they do not melt well. I would also stay away from using more than 2 types of cheese. Try Smoked Gouda and Gruyere.
4. DON'T PRESS: Never ever press your sandwich to "Make is cook faster". This will make the bread compressed and dense besides it will make it soak up more grease(butter).
5. FLIP ONCE: The more you flip the grilled cheese the more it with soak up the butter. Not what you want to do. Therefore cook throughly (by lifting and peeking) on one side. Flip once and cook other side.
I get raves on my grilled cheese, and this is my recipe.
2 - 3/4" thick cut Sunflower seed bread
1 - 1/8" thick cuts of sliced smoked gouda
2 - 1/8" thick cuts of sliced Gruyere
2 Tablespoons real cream butter.
Heat skillet over Medium heat, butter one side of bread with 1 tablespoon of better and place butter side down in a fully heated skillet. Sandwich the Smoked Gouda between the Gruyere and place on the slice of bread in skillet. Butter other slice of bread and place on stack butter side UP. Cover and cook about 1 1/2 minutes. Check for doneness, if done flip and reapeat.

Use whole wheat or a multi-grain bread. Put your favorite cheese, or blend of cheeses. Add turkey breast or chicken if desired. Use about a tablespoon of Butter. Melt the butter in the pan. Place the sandwich in and flip right away to get butter on both sides. Then, cook 'til golden brown, flip and do the same on the other side. Serve with tomato or cream of tomato soup for dipping and a slice of dill pickle if desired. You can add a thin slice of white onion before grilling for just a bit of spice.

The best grilled cheese:
butter the inside of the bread of your choice
place a slice of American cheese on each slice of bread with a piece of Mozzerella on one piece of American cheese
place pieces together
butter both sides
have skillet hot enough were butter will "dance" across it
lay sandwich down and let it cook on one side, flip, allow the other side to cook until golden brown and crisp.
Lay in a platter, cut in half, watch the cheese ooz out! Enjoy with onion rings, chips and a pickle.

The secret to perfect grilled cheese is to spread mayo on the INSIDE of the bread before putting the cheese in and then grilling. Not Miracle Whip or any substitute. This blends the cheese and bread in together perfectly. Otherwise what you can get is like two pieces of tile with mastic between them.

I like to put bacon on my grill cheese sandwich, or you could add some crab or lobster with the cheese before you grill it.

Use 2 slices of whole or multi-grain bread for texture.
Place both in pan with a slice of cheese on each.
Also fry 2 or 3 bacon strips along side at the same time.
When the cheese is melted & bacon is crisp,
cut strips in half & place on top of the cheese.
Flip the 2 slices of bread together & remove to a plate.
Cut in half or quarters, & provide ketchup for dipping.

I like ham and swiss cheese on Jewish Rye bread. YUM! (I don't actually make the bread - I buy it! Just to clear that up...) Especially if you cook the ham in a frying pan for a little bit first, til it gets a bit dark in places (it adds a lot of flavor).

its not fancy but i always use sharp chedder and it is so much better than boring american cheese! the flavor is so strong and yummy! I always put a lot of butter all the way to the edges and grill it to a dark brown

really good crusty sourdough bread, havarti and swiss cheese, virginia baked sliced ham, thinly sliced vidalia onions and thinly sliced fresh tomatoes, put it all together like a sandwich and spread herbed mayo on the outside of the slices and cook like you would any grilled cheese sandwich, yummy
