Okay so for school I need to make a cake, so I want to make one that looks like this::

Problem is, that cake uses cake mix, and I'm not allowed to.. I need to make it from scratch.
So what I need to do is make a heart-shaped sponge cake, and then pink strawberry-flavoured icing on top. Then I will put decorations such as lollies around the cake (like in the picture).
Can anyone please tell me how to make the sponge cake first, then the icing? I have a time limit too, as I need to make it in class (I will have around an hour to make it, at most).

I can't remember where I got these but I had them writen down in folder I keep all my recipies


A cake that sort of spongy and might be what your looking for is:

3 cups cake flour (not self-rising)
2 teaspoons baking powder
1 teaspoon salt
3 sticks unsalted butter, room temperature
2 1/4 cups sugar
1/2 teaspoon pure vanilla extract
1 cup milk
8 large egg whites


Straberry Buttercream:

4 large egg whites
1 1/4 cups sugar
3 sticks unsalted butter, room temperature, cut into tablespoons
1 teaspoon pure vanilla extract
12 ounces strawberry jam, pureed in a food processor

I'm not sure you want to try to make a sponge cake and then cut into heart shape and frost, etc. A sponge cake is normally used as a roll-up because it's less than 1 inch tall.

I use the recipe for Jelly Roll cake to make the sponge cake for our Strawberry Roll-up from my Better Homes & Gardens cookbook or my Betty Crocker cookbook. The sponge cake bakes for 12 to 15 minutes. Once the sponge cake is removed from the oven, turn it out onto a linen towel that has been liberally covered with powdered sugar, remove the wax paper (sometimes a sharp knife and gentle fingers help to remove the paper) and then roll it up in the towel and return it to the cooling rack. But it still has to cool.

The Strawberry Roll-up is: Take the cooled sponge cake and unroll it and make sure it's not stuck to the towel. Spread most of an 8 oz container of Cool Whip (plain or flavored) on the inside of the cake. (You can make whipped cream if you can't use the coolwhip.) Add sliced berries almost edge to edge. Sprinkle a little powdered sugar on th berries. Roll up the filled cake. Spread rest of Cool Whip on outside of roll. Place a few pretty berry pieces onto the top. Cut with serrated knife.

Keep refrigerated if not using right away, but it doesn't keep well since the cool whip just soaks in.

If you tell me more about your assignment, I might be able to give you some suggestions. Did you know you can buy heart shaped baking pans? Any cake with frosting is going to be tough to do in one hour.

But you could almost get it done making a Boston Cream Pie - single layer Dinette Cake (bakes 30-35 minutes), vanilla pudding (or custard if you can't use a box pudding) and chocolate frosting on the top only. I'll give you the recipe if it will really help you. Otherwise, I don't want to take the time to type it here!

Easy Sponge Cake

INGREDIENTS
3 eggs
1/2 cup castor sugar or superfine sugar
2/3 cup self-rising flour

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Grease an 8 or 9 inch round cake pan.
In a medium bowl, whip together the eggs and castor sugar until fluffy. Fold in flour. Pour into the prepared pan.
Bake for 20 minutes in the preheated oven, or until the top of the cake springs back when lightly pressed. Cool in the pan over a wire rack.
