I use the buttermilk pancake recipe from Joy of Cooking and then pure maple syrup. A couple times per year, I add some blueberries to the batter.

Buckwheat pancakes are excellent also if you can find a mix or the buckwheat flour...also with pure maple syrup!

I don't pay so much attention to the brand of pancake mix, but have you ever tried a "cheese pancake"? I have some friends that are Dutch, and they showed it to me (as disgusting as it sounds, it's DELICIOUS! I hate pancakes, but I LOVE these!)
Make the pancake batter as usual, and start cooking a pancake. Before you flip it over, lay thin slices of gouda cheese on the uncooked side. Flip it over and let it cook, and you have a wonderful breakfast of cheesy, pancake-y goodness!
(I also like plain pancakes with Nutella and some maple syrup.)

Potato Pancakes are really good. I also like Buttermilk Pancakes.
