This is not about immortality. The "immortals" refers to the gods on Olympus. The point is not to envy those who are nominally more fortunate than yourself but, rather, to enjoy your own life as best you can.

Basically, Pindor is speaking to his soul, saying that he wishes not the be ambitious and seek things that have not been proven to be real (in this case, immortality), but to be content with the life he has now.

After all, this was written around 500 B.C. Of course it's abstract.

It means to stop hoping for the impossible and face reality because that's all you really have. Why wish for the moon when the earth is within your grasp?
